Like I have mentioned before, I love making Nathan bread. I saw this bag of 'Super Seed & Ancient Grain Blend' - a bag of all the powerful grains such as, chia, flax, hemp, and more. I thought, "how wonderful would it be to make my usual bread with whole wheat flower and all these powerful nutrients?" I love making this bread and slicing it for sandwiches; it's truly divine. This is an easy way to pump some powerful nutrients into your week! What's even better - make some turkey sandwiches on this the day after Thanksgiving!
You will Need:
- 3 cups whole wheat flour
- 1 3/4 teaspoons salt
- 1/2 teaspoon yeast
- 1 1/2 cups water
- 1 1/2 tbs Super Seed & Ancient Grain Blend (optional)
In a large mixing bowl, whisk together flour, salt, yeast, and seeds. Add the water and mix until a shaggy mixture forms. Cover bowl with plastic wrap and set aside for 12 - 18 hours. You can also make this bread before you go to bed! It will be ready to cook in the morning! Pre-heat oven to 450 degrees. When the oven has reached 450 degrees place a cast iron pot with a lid in the oven and heat only the pot for 30 minutes. While heating, pour dough onto a floured surface and shape into a ball. Cover with a towel and let set while the pot is heating. Remove hot pot from the oven and drop in the dough. Cover and return to oven for 30 minutes. After 30 minutes remove the lid and bake an extra 15 minutes. Once bread is cooked remove from pot onto a cooling rack. This is important because you don't want the bread to cook anymore in the hot pot!
